Bryce D. Hardy, Owner
Bryce Hardy knew when he and his wife Kerri and their daughter moved to Wethersfield that this would be the perfect setting for his life long vision to create a new kind of dining experience. He finally realized that dream in 2019, with the purchase of the E. G Robbins House in Old Wethersfield. After almost two decades in the restaurant and hospitality industry, he knew it was time to bring his vision to life. Combining his love for great food, creative cocktails, and exceptional service Bryce began to build his team with the best in the business. He opened the doors to The Charles on June 15th, 2020.
Chanthoeun Thanh, Executive Chef
Chef Chanthoeun Thanh is known for his bold, globally inspired cooking and sharp culinary leadership. His journey began at 14 and quickly accelerated with his formative years at Restaurant Bricco, followed by a decade at Carbone’s Ristorante, where he rose to Head Chef and helped launch Carbone’s Prime as opening sous chef. Thanh later served as Executive Chef at Que Whiskey Kitchen, Culinary Director for Wood-n-Tap, and Corporate Chef for the Statement Group. He also led the opening of Char & Lemon as its founding Executive Chef. Thanh’s philosophy is simple: cook without borders, lead with intent, and let the work speak for itself.
Michael Walker, General Manager
Michael Walker’s career in hospitality spans more than 20 years, shaped by some of the most dynamic dining scenes in New York City and Connecticut. From the fast-paced kitchens of 5 Napkin Burger and Landmarc at the Time Warner Center to celebrated Connecticut restaurants like Barcelona Wine Bar and Salt and Lime, Michael has built a reputation as a hands-on, service driven leader who blends operational excellence with genuine care for guests and team members alike. Michael approaches every day with the philosophy that great hospitality starts with people both those he serves and those he leads.
Nyeemah Hightower, Executive Pastry Chef
A Hartford native with over a decade in the pastry world, Nyeemah Hightower built her name in some of Connecticut’s top kitchens and as the founder of Sweet Tooth, a Windsor bakery that earned national attention after being featured by The Hartford Courant. The story was picked up by outlets such as The Washington Times, and AP News, celebrating her successes and community-driven approach. Known for her bold flavors, refined technique, and modern takes on nostalgic desserts, Nyeemah’s work bridges fine dining precision with soulful, memorable sweets. Her passion for storytelling through pastry makes her the perfect addition to lead our dessert program into its most exciting chapter yet.
